I would think that, when interacting with a human, a dog is using far more than scent to recognise stress?? They can hear your heart beat ...

My traumatised rescue cat ... when I first had her (she was 6) I was trying to run a charity from home, totally out of my depth, and had recently lost my dad after a long illness then my brother in an accident. Any time I was trying to work on my laptop, I was concentrating and stressed. Within seconds the cat would start - little squeaky mouek-moueks quietly demanding my attention. She would drive me crazy doing this because she wouldn't let me touch her so if I went to give her attention she would run off and no sooner would I settle down and focus on the screen than she'd be back - mouek ... mouek ... one time I was so beside myself with frustration I scrunched up a small piece of paper and threw it AT her as hard as I could. She sat looking me straight in the eyes as it hit her on the head, never flinched. That's when I realised something was going on. She was doing everything she could to draw me away from the source of my stress. I think they broke the mould when they made this cat.
