Yes, maybe she would still be alive if she had gone to the doctors straight away. That made me think, what would you do if your dog started fighting with another dog?

That's awful - I'm guessing sepsis, or similar?
Dog fights - I've seen my fair share, having two dog aggressive dogs!
There's actually very little you can do without getting physical, especially if the other owner can't/isn't willing to help!
If the attacking dog has a collar on you can twist it until they let go, but the other dog must be held still as well, or once the attacker let's go, the victim could get a hold!
You can throw a bucket of water over them, and the shock often makes them back off, but not always.
Sometimes lifting the back legs off the ground will work, but you've still got to a) manage to grab the legs of a snarling, fighting dog & b) restrain both dogs at the same time.
You can push the attacking dog's nose into the fur of the other dog, and it have to let go to breathe.
Very few dogs will bite & hold in one place, even the bull breeds tend to bite, shake if the opportunity artistes, and then release & go for another bite. If both owners can pull the dogs apart the second the attacking dog releases, that would work.
But believe me, it's bloody difficult to grab any part of a dog that's fighting, and you're always likely to get bitten, even by your own dog in the heat of the moment.
I must admit that I have kicked a dog (hard) in the stomach & testicles to make it let go. That worked, but only on the third attempt, and I was desperate because Dempsey's head was being mangled!

Luckily, we have never experienced fights between ours and others, all the options sound quite involved. The best imo would be the water, but unfortunately, I don't carry around buckets of water with me! And I guess water from a bottle would not do enough? Hopefully, we will never have the problem, but you can never tell...

My initial thought when I saw this on the news was that the dog had gone for her throat?? Seems a bit more complex ...
